OOKING
For best results, follow these guidelines when using your Slow Cooker:
Slow Cooker should be at least half filled for optimum results.
Since the Slow Cooker is designed to cook over a prolonged period of time,
cooking for an extra hour or so on the Low or Keep Warm setting will not be
detrimental to most recipes.
Certain foods should not be cooked for a long time. Foods such as dairy
products, pastas and rice should be added to the Slow Cooker during the last
two hours of the cooking cycle.
When cooking vegetables with meat, place vegetables on the bottom of the
Slow Cooker and place the meat on top.
When cooking frozen foods, increase cooking time accordingly.
When preparing meat, adding a small amount of water to the Slow Cooker
isrecommended to keep the meat tender
. The leaner the cut of meat,
themore water is recommended. When using the Low setting, less liquid
isneeded since there is little evaporation.
Large pieces of meat and vegetables will cook faster if cut into small pieces
prior to cooking.
If the completed dish has too much liquid, remove the lid and set the
SlowCooker on High until some liquid has evaporated.
While browning meat prior to Slow Cooking isnot necessary
, it may improve
the color of the meat.
When making a casserole with meat, lightly coating the meat in flour and
browning it before adding to the Slow Cooker may help to seal in the juices.
To thicken a casserole set the Slow Cooker on High and mix in a thickening
agent, such as flour and water . Allow it to simmer until thickened.
For optimum results, the last ingredients to be added to the Slow Cooker
should be liquids and sauces.
Little or no stirring is required when using the Low or Keep W
arm settings.
When using the High setting, stirring ensures even flavor distribution.

OAST
1 teaspoon chili powder
1-1/2 teaspoon sea salt*
1/2 teaspoon cumin seed
1/2 teaspoon ground coriander seed
1/2 teaspoon ground paprika
4-1/2 to 5-lb. beef rump roast
1-1/2 cups medium or mild heat salsa
1 tablespoon honey
3 medium sweet potatoes – peeled and cut into thirds
1 small whole peeled onion
4 carrots peeled and cut in halves
3 ears of corn,(husks removed)
cut into quarter rounds
4 poblano peppers, seeded
1 serrano pepper, seeded**
1 cup of canned black beans – drained and rinsed
Mix the first five ingredients together in a small bowl to make the rub.
Rub the roast evenly with the spice mixture and place in the Slow Cooker .
Mix 1 cup of the salsa with the honey and pour over the roast; reserve the
other 1/2 cup of salsa. Add the next 6 vegetables. Set the Slow Cooker to
Roast and cook for 8 hours. Remove roast and vegetables from Slow Cooker
place in serving platter . Add the 1/2 cup of reserved salsa and black beans
to the sauce in the pot and stir . Slice the roast and pour the sauce over
theroast and vegetables.
*If using table salt, reduce salt to 1 teaspoon. Y
ou may omit the salt.
**The seeds and membranes in chili peppers contain most of the capsaicin,
the compound that lends them their mouth-searing qualities. Use caution
when handling these chilies. Serranos are hot enough to easily irritate
theskin on the hands and it can be painful if their juice comes in contact
withthe eyes. W
ear thin disposable surgical gloves while working with
hotchilies, and don’
t touch your face until the gloves are removed.
If you do not want a “hot” sauce omit the serrano pepper or use only
halfa pepper for less heat.
