    thickest part of the food. Do not come in contact 
with bone, fat or gristle, as these areas will not 
provide accurate temperature readings. Take care 
when moving the probe into position to avoid 
injury or damage. DO NOT LEAVE THE 
THERMOMTER IN THE OVEN WHILE COOKING, 
AND DO NOT TOUCH THE HOT PROBE WITH 
BARE HANDS.  
5. The current internal temperature of the food 
appears on the LCD screen. 
6. Hold Feature: When the digital display has been 
stabilized, press the "Holds
" button and the 
temperature will be held (the letter "H" will 
appear). Press again to release.
7. Backlight Feature: A backlight will turn on for 
60 seconds when the unit turns on, or for 15 
seconds when the “Hold” is pressed. Manually 
turn on the backlight for 15 seconds by pressing 
CAL button quickly while the unit is on.
8. Clean the thermometer casing by hand. Do not 
immerse the thermometer in water. Be sure to 
sanitize the stem before inserting it into another 
product.
Calibration
Digital thermometers that have a bead type 
thermistor sensor such as the model 9867 seldom 
require recalibration or testing. The reason for this is 
the long-term stability of the thermistor sensor. 
Nevertheless, if it is desirable to calibrate to a 
specific temperature the following procedure is 
recommended if recalibrating at 32°F (0°C).
1. Fill a container with crushed or chipped ice.
2. Add water slowly until it overflows.
3. Add more ice until it is packed tightly to the 
bottom of the container, allowing excess to 
overflow.
