FOOD HOLDING GUIDE
NOTE: All times and settings are recommendations only and may vary depending on product preparation,
cooking time, internal food temperature, location of unit in operation, geographic region of particular
operation, as well as frequency of door openings.
Cabinet control temperature thermostat has a range of 90°F to 200°F (32°C to 93°C).
NOTE: Meat and Dairy Products 140°F (60°C) minimum.
NOTE: “Proofing” of bread products is usually done in the 90°F to 95°F (32°C to 35°C) temperature range.
